January 2005
January is historically the slowest month of the
year here on the East Cape, as it tends to be more
wind surfing weather than fishing weather. This
January was a real exception, as from December 27
until January 27 we had as many as 10 days in a
row with perfect weather, then a few days of wind
and more beautiful weather. It was like late
March!
Work has been ongoing
at the hotel. When you next visit, expect to see
some changes for the better here! The resort will
be undergoing a facelift this winter. By spring,
expect to see new lighting in the gardens, updated
decor in all the rooms and new barstools at both
bars. The boats are getting new engines, new
fiberglass and new paint.
Winter is also the
time for most of the promotion for our resort. Axel
has been in several outdoor shows, and after
five back to back shows, everything is ready for
the biggest one, the Fred Hall show at Long Beach
convention center. If you are coming to the show,
we will be at the same spots as always, stop by
and say hi to Esaul and Axel, they both will be at
the show.
Deals abound in January and February too, as we
are offering fourth night free and sixth and
seventh nights free if you book three or five
nights on the American Plan.
As always, we greet you with open arms and wide
smiles and look forward to your next visit to the
Jewel of the East Cape. And of course, we thank
all of you for your continued patronage over the
years, and we hope to see you very soon!

La Cocina
Buena Vista Tortilla Soup
This month’s special recipe is for Tortilla Soup.
If you haven’t tried it, be sure and order it for
lunch the next time you’re here. It will rock your
world!
1 whole chicken
3 quarts water
4 tbsp powdered
chicken bouillon
5 poblano chiles,
thinly sliced
8 large, ripe
tomatoes, thinly sliced
2 large, white
onions, thinly sliced
3 cloves garlic,
minced
1 tbsp dried oregano
4 bay leaves
Salt and pepper to
taste
Garnishes
12 corn tortillas,
cut into strips about 1/2 inch wide
½ cup corn or canola
oil
2 avocados cut into
chunks
1½ cup Chihuahua or
Jack cheese, grated
1 cup crema media
acída or sour cream
Fresh cilantro, in
sprigs
Cook chicken in water
and bouillon for one hour. Remove chicken and cut
into chunks. Return to pan, add seasonings and
cover.
About 20 minutes
prior to serving, combine the chicken and stock
with the vegetables and heat thoroughly.
Deep fry the tortilla
strips and drain on paper towels. Divide each
among eight to 10 large soup bowls. Fill almost to
top with the soup. Then garnish with a few chunks
avocado, some grated cheese, a float of crema and
a sprig of cilantro. Serve immediately and prepare
to gloat.
Note: Leftovers are
great the next day too.

cookbook, Cooking With Baja Magic Dos. Look for it

Little known
tidbits of Hotel Buena Vista's History
Did you know…
Our pastry chef is Rafaela and she
is known throughout the area for her amazing
dessert creations. She works out of the original
hotel kitchen, at the very top of the hill near
Hortensia’s office. It is here that she performs
her works of magic! If you walk up the south path
toward the office, you can hear her singing as she
works almost every afternoon. You can also get a
whiff of the day’s specials, and they’re
guaranteed to make your mouth water!
Contest of the
Month!
Last month’s contest winner was Mary Fedorka, who
will be joining us in mid-March with her husband
Buzz for three weeks. When she’s here, we will
make sure they enjoy the special dinner two with a
bottle of wine. Congratulations, Mary!
This month’s question: Who is the guy whose photo
is on the dining room wall by the front entry
walking across the top of the fish scale where the
day’s catch are weighed and displayed for photo
opportunities by proud anglers? Also, what is this
guy’s current job now that he’s a bit too old for
such acrobatics?

Our fish story of the month is a
tribute to one of our most popular captains,
Rosario (Chayo) Cota, a handsome, charming guy
with an amazing story. Twenty years ago, when
Chayo was 21, he was an aspiring captain, working
hard as a deckhand on one of the hotel’s fishing
boats. However, he was in a serious car accident,
which resulted in him losing an arm. He was in the
hospital for a few months, and during that time
Jesus (Chuy) Valdez, the hotel’s owner, visited
him to assure Chayo that he still had a job—in
whatever capacity he was capable.
Chayo returned to work as part of
the beach crew. Years later he was put in charge
of cleaning and packaging the fish. Little by
little he started fishing again—acting as a
“substitute captain” and taking out charters
whenever someone was ill. He also captained the
pontoon boat whenever a group came along that
wanted to go fly-fishing. Three years ago Chayo
was offered the job of captaining a refurbished
Fiberglas single engine 28-foot cruiser, the
Nueva Era. Chayo has completely overcome his
disability and his joyful attitude toward life
makes him a great person to be around.
